Ramen party

This is the first time I've had homemade ramen, and it was delicious. The chef made enough for 25 bowls. The soup was tonkotsu, deep flavor but not too oily (Ippudo is good but it's a heavy broth). Very simple taste, I ate two bowls but could have probably eaten a couple more because the soup doesn't really weigh you down much. Everything was homemade. He said that the soup took 3 days to make, in 8 hour shifts. The noodles took 4 hours and were the most difficult because unlike the soup base which can be left alone to simmer, the noodles need constant attention while you're making them.
